What is Traditional Natural process coffee ?

Whole coffee cherries are spread in thin layers on raised beds or patios and sun dried without depulping, allowing fermentation to occur naturally inside the fruit. The dried cherries are later hulled to remove the husk.

Typical flavor notes: Sweet and syrupy body, ripe red fruits (blueberry, strawberry), chocolate, wine like undertones, lower perceived acidity, and heavier mouthfeel.
