About the Process

Extended Fermentation Natural Process The process involves fermenting and drying whole coffee cherries under aerobic conditions. This encourages microbial activity that breaks down sugars and mucilage, enhancing the development of flavor and aroma. In extended aerobic fermentation, moisture is retained during drying, allowing the fermentation to continue in a warm, well ventilated environment with moderate temperatures and humidity. This creates ideal conditions for controlled microbial activity without the risk of over fermentation or mold. The result is a coffee with vibrant fruity notes, wine-like acidity, and complex aromas.
